Recipes using Xylitol
By Samantha Grant, CN
Because Xylitol is a 1:1 ratio with sugar, it can be substituted in most recipes for a very sweet result.
Honey Mustard Dressing
1/3 cup xylitol
1/2 cup lite mayonnaise, preferably made with Grapeseed Oil or olive oil (Spectrum Brand)
4 Tbsp Dijon mustard
1/2 cup organic extra virgin olive oil
1/4 cup organic apple cider vinegar
2 tsp minced onion
1 tsp Xanthum Gum (for thickening)
1/4 tsp Redmond's Real Salt or other sea salt
1/4 tsp ground lemon pepper
Whisk all ingredients together. Refrigerate for 1 hr.
Here's a cookie recipe to satisfy your sweet tooth:
Almond Butter Protein Cookies
1 Egg
1/2 cup Xylitol
1 t vanilla extract
1 cup Natural Almond Butter
1/2 cup Vanilla Protein Powder
1 TBSP ground Chia or Flax seeds
Whisk together the egg, xylitol, and vanilla. Stir in the almond butter and gradually mix in the protein powder. Drop by the teaspoon onto a prepared baking sheet, flatten dough with a wet fork to prevent sticking, and bake at 350 degrees for 10-12 minutes. Makes 1 dozen cookies.
